Raspberry and White Chocolate Blondies

Raspberry and white chocolate blondies are super delicious, buttery, creamy white chocolate and the fruity tang of raspberry, the perfect combination!

 I have made these blondies twice and I'm now going to share with you guys how I made them (There is also a video on my YouTube channel if you want something more visual!)


Raspberry & White Chocolate Blondies

Ingredients

210g Plain Flour
225g Soft Dark Brown Sugar 
170g Unsalted Butter
2 Teaspoons Vanilla Extract
1 Medium Egg
200g White Chocolate 
50g-100g Frozen Raspberries (depending on how fruity you want your blondies to be)

I used a deep tray to bake these in, I got my tray from Tesco and it was £4


Method

  1. Melt the butter, place melted butter into a mixing bowl, add the sugar and mix together, once they're both mixed together add the vanilla extract. 
  2. Crack and add the egg to the mixture and mix, once the egg is mixed in add the plain flour.
  3. Chop white chocolate into smaller chunks and mix into the batter, then fold in the frozen raspberries, if you mix them in with a hand mix it will cause them to break (and that does not want to happen) 
  4. Add mixture into your greased tray (you can also use baking paper) spread evenly, then place into your pre-heated oven (160︒ for a fan oven) and let it cook for 30 minutes. If you insert a knife or screwer into the blondie once it's done it should come out clear or with no batter on, this will mean the blondie is fully cooked and not raw in the middle.   


And that's all you have to do for delicious raspberry and white chocolate blondies!
